Next time: Nothing, I’d make it the same way.
All three homemade parts in one bowl. Five minutes once the dressing, croutons, and chicken are made.

This is the finale of my Chicken Caesar Salad series. It brings together my homemade Caesar dressing, homemade croutons, and Italian chicken thighs. One head of romaine, washed, dried, and chopped, then the sliced chicken, a couple of generous scoops of dressing, and the croutons, tossed together. It serves 2 with leftover chicken, and it takes 5 minutes once the parts are made. My honest rating is 8/10, and my wife gave it a 10/10 (she said 10 plus!).
Tips and swaps
- Make the dressing, croutons, and chicken ahead; then it is 5 minutes to assemble.
- The 6-thigh chicken batch leaves leftovers for lunch.
