Mexican street corn as a side, and it’s a quick one. I fry a bag of frozen corn in butter until it’s fairly charred, mix it with mayo, sour cream, chili powder, and garlic powder, then fold in Cotija, green onions, cilantro, and lime and finish it with Tajin. My honest rating: 9/10, and my wife gave it a 10.

Mexican Street Corn

Skillet street corn: butter-fried frozen corn mixed with mayo, sour cream, chili powder, and garlic powder, folded with Cotija, green onions, cilantro, and lime, and finished with Tajin.

Ingredients
  

  • 16 oz frozen corn 1 bag
  • 1 tbsp butter
  • 2 tbsp mayo
  • 1 tbsp sour cream
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 3-4 oz Cotija
  • 2 green onions
  • 1 tbsp cilantro
  • 1/2 lime juiced
  • salt
  • pepper
  • Tajin to finish

Method
 

  1. Melt the butter in a pan and fry the corn until it’s fairly charred.
  2. Mix it with the mayo, sour cream, chili powder, garlic powder, salt, and pepper.
  3. Fold in the Cotija, green onions, cilantro, and lime.
  4. Finish with Tajin and serve.
